I have a delicious stuffed bell pepper recipe that we love already but I thought this might be a nice healthier option. :D I tweaked the recipe a ton based on what I had on hand and the fact that I only wanted to make 2 peppers instead of 6. Here is the link to the original recipe:

I just used colbyjack or mozzarella (I can't even remember). And I left out cilantro because I'm not a huge fan. Then it was just a matter of adjusting amounts (which I honestly can't really remember). Anywho, they turned out great! I won't lie, they definitely aren't the same as the unhealthy rice and meat version but still certainly yummy! We will most likely do them again some time!
