"Cooking with Love Provides Food for the Soul" - Chicken & Broccoli Quinoa casserole

I've been thinking lately about how I don't blog enough and I realized I feel like I don't usually have anything "blog" worthy to write about. So I wondered what I could do to step this up a knotch and thought why not blog a little here and there about my cooking adventures! This is by NO means an attempt to make this into a food blog or anything, but I've been experimenting a big and really LOVE to cook so I figured why not recommend the recipes I love :D

First up on my list of adventures is our biggest hit lately. I have made a few different quinoa recipes in an effort to feel out the food and this one was by far our favorite so far! It is a Chicken and Broccoli Quinoa Casserole that is basically chicken, broccoli and quinoa baked in a homemade cream of chicken soup sauce. I was super pleased with this recipe because it was delicious and is super healthy!  Not only that, but even though I left out the bacon Christopher LOVED it too! I mean, he could probably down the whole dish if I let him! :D  Here is the link: http://pinchofyum.com/creamy-chicken-quinoa-broccoli-casserole#_a5y_p=1242330 You should totally hop over to pinch of yum and try it!

My only other tweaks to the recipe was using mozzarella cheese because I didn't have the kind it called for and I did NOT add any water when I put in my broccoli because a lot of the comments had called attention to the fact their casserole was a little on the soupy side. This also had to do with bake time which the blog author has actually adjusted since I first made it.  Oh and I used Mrs. Dash instead of Emeril because again, its what I had. Anywho, random I know... but I hope you enjoy it if you do try it out! I've had some other cooking adventures I'm excited to share soon too! Until then :p
